I'm going to try to make this! I've never made curry from scratch, I had too many kids and not enough time LOL. But now that the kids are out doing their thing, maybe I finally have time! Exciting!
It was my first time too!!! It is a fantastic recipe. I followed it to the letter and also made the raita and got pickles from the Japanese store. But there are online recipes for the pickles that dob't really seem too hard. I was so proud of myself... apparently that particular brand of curry powder is key. That cookbook rintaro is just gorgeous. The online shop Japanese pantry had a signed copy as a kit with a bunch of pantry items, I wish I had done that. Now sold out--but I am very curious about the rice https://thejapanesepantry.com/collections/all
Looks delicious! I didn't know of Japanese curry until I was in my twenties. A friend who grew up in Hawaii, 2nd generation Japanese American, introduced me to his cooked version. It was a revelation! lol!
I don’t bake either, but I do liked homemade baked foods. Discovering Just One Cookbook’s mushipan cut out half the things I hate about baking... because they’re steamed on the stovetop!
This site has some fantastic recipes. I wanted to mention that her cookbook is my main cookbook that I actually cook from --usually I just look at the photos and dream.. :)

I had never heard of it either! My understanding of Japanese food before going there was limited to benihana's!
